Mr. Pollo has long served Colombian arepas - fat, sweet little corn cakes stuffed with cheese - but the restaurant changed directions when the owners hired Manny Torres, a Venezuelan chef with four-star training. Torres does everything from shopping at the farmers' markets and breaking down whole goats and lamb to serving food and doing dishes. In his larger, flatter stuffed Venezuelan arepas, Torres layers meat (or grilled vegetables) with, cheese, avocado, tomato, and his salsa de ajo, a mayonnaise fragrant with garlic and cilantro. A neighborhood cult of Manny has arisen based on his four-course tasting menus, which can include roast pork loin and octopus.
