Because Mr. Max doesn't serve such Westernized staples as sushi, yakitori and tempura, some may find this authentic (if not authentic-sounding) Japanese eatery disorienting. But the traditional fare--most of it is delicious, some of it is, well, very exotic--is expertly prepared.
