Mozzarella Company owner Paula Lambert is somewhat of a legend among Dallas cheese lovers, and we really wish she were our grandma because she, along with her army of hairnet-sporting workers, has been turning out award-winning cheeses for more than 30 years. It’s not just limited to mozz, though. Lambert also produces a plethora of other cow- and goat-milk cheeses from caciotta (a Parmesan-esque hard cheese) to feta, plus layered mascarpone “tortas” in savory and sweet varieties -- Pecan praline? Yes, please. The retail space isn’t much to look at, just a tiny shop with a refrigerated case and a freezer filled with pastas and pizzas, but you can watch the cheese being made in the production room through a window. For folks looking to get a little more in touch with their cheesy side, the Mozzarella Company also offers cheesemaking classes and wine pairing seminars on the reg.

Soft, smooth, ivory-colored snowballs of fresh mozzarella move out the back door of Paula Lambert's The Mozzarella Co. headed for local groceries including Simon David, Whole Foods Market, Tom Thumb, Albertson's and Fort Worth's tiny, exclusive Roy Pope Grocery. Some of these cheeses are headed for the salad plates at The Mansion, too, where they might be sliced and alternated with juicy, red slices of ripe tomatoes, drizzled with extra virgin olive oil and topped with racked black pepper... The Mozzarella Company is an amazing hole-in-the-wall Dallas success that produces specialty cheeses. We're talking real whole-milk mozzarella that could make any self-respecting Italian smack his lips. It's smooth and creamy and just flat-out good. Get out of the supermarket. Drive to the Mozzarella Company and see for yourself. You will agree. Molto buon. More »
The Mozzarella Company's whole-milk mozzarella gives the gunk sold in grocery stores a really bad name. The company, located in Deep Ellum, is celebrating 20 years of making cheese. Grocery store shoppers may not generally know that the cheese that's sold in plastic bags with far-off expiration dates would hardly be called mozzarella in Italy. It would probably be called spoiled. The Mozzarella Company's whole-milk mozzarella is so creamy, pliable and delicious you may want to consider a... More »
