To find the clandestine Merc Bar, hunt around the center of the Esplanade while trying to spy the tiny golden plaque beside its front door. Once that's done, head inside to soak up its high style setting -- brass tables, designer sofas, dark wood accents -- and virtual bat-cave lighting. Clientele is of the well-heeled sort, with plenty of businessmen and pretty young things sipping French martinis while nibbling on gourmet appetizers. Get there early, the place fills up quickly.

Between the years of 1920 and 1933, advertising a speakeasy would have been an idiotic way to land your ass in prison, where you'd undoubtedly try your hand at making drinkable toilet wine. Today, DJ... More »

For eight years, Simon Alam has been something of a legend at Phoenix's trendy Merc Bar (2525 E. Camelback, 602-508-9449), serving drinks to stars and regular schmucks alike amidst groovy... More »
Tommy McCormack of Merc Bar says when it was created in the 1940s, gin was the most popular spirit, but the Moscow Mule gave vodka some leg and a boost in popularity. The combination of vodk... More »
These days, bars tend to play it fast and loose with their martinis, slapping disparate fruits and herbs together with vodka and calling it good. MercBar is as guilty as anyone on this, though their mixtures -- like the Espresso Martini made with Stoli Vanilla and Bailey's -- are better-crafted than most. But to us, a true martini is made with lots of gin, a little vermouth, and olives, and it's with these simple things that Merc's bartenders shine. We've never had a better dirty... More »
We have seen quite a few so-called lounges pop up recently, but none of them have the authenticity of Merc Bar. Dress to impress and be prepared to drop a pretty penny at this Phoenix installation. The timeless dim lighting, low-set seating, and dark wood surroundings set the stage for a proper evening of libations and eye candy. Lurk in the dark nooks of the swanky lounge and sip your Manhattan while you take in the scenery, or snag a coveted seat at the bar and chat up the friendly (and... More »
Some places just cram mint leaves in the bottom of a glass, pour rum over them, and call it a mojito. But at MercBar, the mojito is a piece of real craftsmanship. Bartenders take their time crushing ice and mint leaves together in the glass before adding just the right balance of rum, sugar, lime juice, and soda. Some of the mint leaves float to the top of the glass, but most remain at the bottom, effectively infusing the drink with fresh mint flavor for the duration of its existence --... More »
When it came time to round up our 10 best girlfriends for the long-awaited Sex and the City movie, we knew there was only one place to go afterward, for a round of cosmopolitans: Merc Bar. We love this Biltmore hotspot because it's not only dark and sexy but comfy -- the perfect place to talk, sip, and ogle eye candy. We particularly love the cosmopolitans: classic pink tartness in an elegant glass. To quote Samantha Jones, "What could be more fabulous?" More »
If you want to find a well-heeled date for the future, or even a Rolly-wearin' husband-to-be, you don't have to confine your search to Scottsdale. All you need do is head over to Phoenix's ultra-cool Merc Bar, preferably on a Friday or Saturday night. You won't find a hipper watering hole in New York or L.A., and the place is always hoppin' with beautiful people. Who're not all under 25. Because, if you're looking for a sugar daddy, you generally want somebody who's old enough to actually... More »
Slinky, suave, sophisticated, and about a dozen more s-words besides, the Merc Bar is the sort of place where you can expect to see drop-dead dime pieces in backless black dresses sipping French martinis with Ketel One and Chambord, while GQ-gorgeous guys enjoy their Belvedere vodkas straight up. The interior is dark with wood paneling plucked from some Eurotrashy '60s ski-resort flick starring Elke Sommer. And all about are low couches, chairs and ottomans that the beautiful people of PHX... Call it novel inspiration: On many a sweltering Havana day, Ernest Hemingway kept cool at his favorite watering hole, La Bodeguita, with a steady supply of ice-cold mojitos. Not surprisingly, the famous Cuban concoction helps beat the heat here as well -- if it's good enough for the literary legend, it's good enough for the parched souls of Phoenix. A tall, refreshing glass of rum, fresh mint, sugar, lime juice and soda, the mojito's been popping up on drink menus around town. But let the... More »
Comely ladies, accommodating bar staff, sharp-looking men, and a charming atmosphere are the ingredients necessary for beguiling a client. And the Merc Bar is just classy enough to show that you have taste, but cozy enough to avoid pretension. You can call it a refined hole in the wall. And Troy, the energetic general manager, will even make you his specialty, Caipirinha, which earned last year's Best Cocktail award from New Times. More »
Enough with the overdone beverages featuring four kinds of rum, six kinds of juice and a sugar cane swizzle stick. And ditto for those so-called "martini" menus, on which every imaginable concoction is called a martini, even when licorice or chocolate is involved. And don't even get us started on the horror of blue drinks. We're looking for something tasty, easy to drink, strong (but not noticeably strong), not out of a can or a mix, and not too gender-specific (scotch is such a guy thing,... More »

Merc Bar is like a little piece of New York in Phoenix--it just has that cool factor, with the handcrafted cocktails, low lighting, comfy seating and attractive staff. And it's no surprise Merc Bar has an additional location in, you guessed it, NYC. http://www.nickialanoche.com/2010/05/29/sex-and-the-city-2-wasnt-necessary-but-it-was-still-sort-of-fun/
