The shrimp tacos at this Nayarit-style Mexican seafood restaurant/taco truck are unlike any found in Orange County. Instead of small shrimp mixed with cabbage and a sauce and folded into a corn tortilla, they grind the shrimp, mix in red onions, then stuff them in a tortilla that gets the fried treatment akin to potato tacos. The shrimp becomes sweeter due to the grease; the taco shell glistens. And the fish taco is so buttery and crunchy- as close to eating chicharones while still keeping kosher.
Although this lonchera technically specializes in seafood from Nayarit, Mexico, Los Corales also prepares the taco gobernador, a speciality of Sinaloa: shrimp sautéed alongside jalapeños and tomatoes, then placed in a tortilla and cooked with cheese. But don't call it a quesadilla, as those don't include a secret pink sauce that unites all the flavors, nor do they inspire lines that can stretch for half an hour. More »
