Though menudo sends some scurrying for the safety of an enchilada plate, Los Ranchitos serves some breathtakingly tender tripe. Camarones a la crema is happiness in a bowl, with shrimp and vegetables simmered in a sauce of tomatoes, pepper, cumin, annatto and cream.
