Liberty adds some much-needed variety to the small cluster of bars on Capitol Hill's 15th Avenue East. With plush couches and fancy drinks, it's more stylish than most of the places on this strip. Sushi as bar food may seem incongruous, but for the most part it's not half bad. The messily formed scallop rolls are quite tasty, as are the yellowtail hamachi and the Rainbow Roll with mango, cilantro, avocado, red pepper, and cucumber. Liberty's shelves sit at least three deep with a variety of fine liquors—including a rotating list of 40 bourbons and a dozen absinthes—and bartenders who have no difficulty navigating them.
Fantastic neighborhood bar on Capitol Hill. My senior associate mixologist Keith Waldbauer is co-owner of it. It's just great to go in and tell Keith what kind of spirit you like to drink and just have him make something up.
Yes, I tend bar here. It's for a reason. The sushi, cocktails and spirit selection are world-class, yet it's couched in the most comfortable and warm neighborhood bar imaginable. Everyone who goes to Liberty falls in love. You will too.
