Like coffee, beer, and cheese, chocolate is something we can consume so often we forget how truly luxurious it can be. Thankfully, Legacy is a great reminder that chocolate can be infinitely more complex, varied, and satisfying than what you get for 75 cents in a vending machine. Legacy imports the Criollo cocoa bean from South America, an ancient bean cultivated for nearly 3,000 years. The result is that each truffle made at Legacy is both complex and deceptively simple. When you buy your truffles you can even choose the intensity of the cocoa you prefer, ranging from 41 to 99 percent (the typical candy bar averages about 10 percent). Flavors include raspberry, mint, almond, and espresso. If you're feeling adventurous, get the spicy chili truffle, which leaves a little kick on the palate and warms the stomach. Or try the Dirty Old Man truffle, which tastes of brandy. At $10 for six truffles, Legacy is affordable, too. And we're not going to lie: You may be tempted to lick the leftover cocoa powder from the wrapper when the chocolates are gone.

Legacy Chocolates, with locations in St. Paul and Menomonie, Wisconsin, has a bit of an edge on its competition. Its potent little pretties, with up to 85 percent cacao solids, boast some of the greatest concentrations of healthy flavanols--a trendy antioxidant. None of... More »
Forty-one percent. 58.5 percent. 73.5 percent. 85 percent. Does that .5 percent really matter? When you're talking cocoa content--and you're talking with Micheal Roberts--it does. Roberts started Legacy Chocolates, with locations in St. Paul and Menomonie, Wisconsin, four years ago. And he knows that, while cocoa content is king with chocolate lovers, more is not always better. His truffles encased in chocolate made with 41 percent cocoa are subtle and light. His 85-percenters pack... More »
