La Fisheria is not Tex-Mex, nor is it like any other Mexican you've had in Houston: Chef Aquiles Chavez makes modern, upscale Mexican food that's heavy on the coastal influences of his home state of Tabasco, in a Heights setting that's vacation-like and relaxing.     Chef Aquiles Chavez doesn't serve chips and salsa or fajitas at La Fisheria, because this isn't a Tex-Mex restaurant: It's a true Mexican establishment from a Mexican chef who's more interested in modern, creative interpretations of his home country's food than in serving standards.
