Francis Touboul moved La Cigale from Atlantic Avenue to its just-off-the-beaten-path location, dropping the "Brasserie" and adding a tag line: "A taste of the Mediterranean." The change reflects the chef's heritage (he's Moroccan), but La Cigale has held on to a few of the saucy French delicacies served in its previous incarnation, like foie gras, snail and wild mushroom casserole, sweetbreads with chanterelles, and Dover sole. If you're going to abandon the One True Faith, be excommunicated from the First Church of the Holy Eggplant of the Blessed Legume, and exchange the heavenly rewards of seitan for the earthly pleasures of Satan, you may as well get as much joy and flavor out of it as possible. And there is no more joyous or flavorful bit of gastronomic apostasy than the thymus glands of a calf, gently poached and carefully picked over, then pressed, lightly floured, sautéed, and bathed in a luxurious... And that plate of escargots with mushrooms, garlic cream sauce, and chives, the one that promises to melt away unwanted pounds like magic, is waiting for you at 4-year-old Brasserie La Cigale.
