Says one long-time regular sitting at the bar of Kirby's: "This place has the best food in Southlake. We've been coming here for years." Turns out, the bar is full of people who have been frequenting the popular steakhouse since it opened in 1999. There's nothing fancy about the design of the place. The granite bar top juts out from the dark wood-paneled wall that displays bottles of expensive spirits. What keeps people coming back, say these regulars, aside from the menu full of prime cuts of beef, are the bartenders, who are experts in mixing drinks and even better at memorizing the names and stories of the folks who find themselves at the Kirby's bar.
