Description

Gerold Castro has relied his hotel-chef experience to found Seattle's fanciest Filipino restaurant. Castro's tendency to lighten up or defunkify classics like oxtail kare-kare and pinakbet (mixed vegetables in an anchovy -paste stew) don't always come off. Fresh lumpia-thin wheat crepes wrapped around vegetables and drizzled with a sweet peanut sauce-are nothing like the egg rolls you're used to (neither are his pencil-thin fried lumpia, either). His tamarind-soured sinigang soup with milkfish is delicately transparent, his light, crispy pandan fried chicken (marinated in coconut and pandan leaves before being fried) has become a legend for good reason. Kawali Grill's weekend brunch staple of tocino (marinated pork) with eggs is worth a separate trip.
