Katsu Burger serves fried, panko-battered burgers on hamburger buns, a brilliant dish that doesn't exist anywhere else. Katsu's owner Hajime Sato, who's run Mashiko in West Seattle for 17 years, says Japanese-born customers ask for the burger with rice instead of a bun and American-born customers want him to hold the breading. He refuses to accommodate either request, since adjustments might detract from his vision. While it's too early to know whether Sato has succeeded in his goal of fashioning a signature dish for Seattle, at this Georgetown eatery, he's crafted something incredibly delicious. Don't miss the nori fries, line-up of housemade dipping sauces, and fantastic green tea milkshakes.
