Named after a lush desert oasis in Xinjiang, China, Kashkar is the city's first Uighur restaurant. Soups are meal sized, including chuchuara-filled with buttery mutton dumplings-and mampa, a stout beef broth rife with irregular homemade pasta. Lamb is king, kebab-wise, with charcoal grilled ribs, tender chunks of shish kebab, and full chops all being offered. Also excellent is goiro lagman, a dead ringer for Chinese carryout lo mein, only the noodles are homemade.
