At John Holly's, the fusion of American, Chinese, Japanese and Pac-Rim cuisines reaches a new level, with dishes often poorly attempted elsewhere -- lobster spring rolls, Thai-style duck, customized non-Edo sushi, flash-seared fish -- fully and finally realized here. The sauces are restrained, with the flavors of main ingredients brought to the fore. Though it's surrounded by dozens of other restaurants -- both chains and independents -- John Holly's is almost always busy, which says plenty about both the kitchen and the loyal clientele.
