Description

Denver's very urban winery, Infinite Monkey Theorem, has grown into an 800-pound gorilla. It got its start in an old Quonset hut on the edge of Denver's Art District on Santa Fe, but after four years there, Ben Parsons moved his operations to a spot fifteen times the size, a 30,000-square-foot building in the hot RiNo neighborhood that now holds both the winery's manufacturing facilities and a tasting/tap room. "We wanted to do something urban and gritty," explains Parsons, and he's succeeded: The tasting room, which opened in the fall of 2012, is outfitted with retro sofas and chairs, and handcrafted tables – one of them a community gathering space that holds twenty – made from reclaimed timber. Only IMT wines, available by the glass, bottle or can, are served here, but that's more than enough."We've designed a community-focused wine lab for people to come in, hang out with friends and chill out with a glass of wine or two,” Parsons says, β€œand while we're happy to educate people about our wines if that's what they want, we're not going to force it down their throats."
