For Houston's 115,000 Central American residents, Pollo Campero conjures up intense memories. The chain's trademark, a chicken in a cowboy hat, is part of Latin American pop culture -- he even appears in a cartoon show for kids. Oh, yeah, the chicken isn't bad either. It's moist, tender and amazingly grease-free.
