Drew and Leah Watson worked in fine-dining spots across the country, but when they decided they wanted to run their own place that would take the simple combination of pizza and beer and raise it to something exceptional, they moved to Denver. They found a sliver of a spot amid all the restaurants popping up in the Berkeley neighborhood. The Watsons filled half the space with a bar that boasts a colorful array of tap handles pouring 22 varieties of craft beer, including the specially made Hops and pIe P.A. from Strange Brewing Company, which also goes into the pizza dough. The beer list keeps the bar seats full of microbrew geeks, chatting with the bartenders about the technical aspects of brewing. But the tables stuffed into the rest of the space are usually full, too, taken by a diverse group of neighbors, families and fans who are just as enthusiastic about the pizzas, made on a unique malt-infused crust and topped with everything from Il Mondo Vecchio sausages to fig jam. The pie list is supplemented with a handful of appetizers, one of which is a not-to-be-missed macaroni and cheese.

While most people who head to the newly expanded Hops & Pie are looking for craft beer and pizza, we'd hop over to this friendly spot for the mac and cheese alone. An order brings a mound of elbow macaroni glazed in a sharp cheddar sauce mixed with pudgy peas and strands of smoky braised ham hock, then spackled with breadcrumbs. But lifting this dish above all others is the deep bite introduced by adding India pale ale to the pot: It lightens the heaviness of the cream and leaves a... More »
Beer taps are our friends. They are utilitarian devices, often carefully and creatively adorned at the handle with a beer name and brand. But rarely do we give our friends their own names. At Hops & Pie, owners Drew and Leah Watson have a special tap, one that serves a house beer, Hops & PiePA, made just for the restaurant by Strange Brewing Company. Hoptymus Pryme, as they call it, pushes the beer through a water filter that has been filled with whole-flower Cascade hops, giving it... More »
