Over the past few years, Denver's booming burger business has included everything from new joints trying to re-create the classic burger to restaurants so redesigning the burger that it's sometimes no longer recognizable. And then there are the spots that fall somewhere in the middle, rethinking this American icon while still celebrating it. Highland Tap and Burger, which opened in the old Aztec Sol location in September 2010, is one of those. The very cleaned-up space still feels like a tavern, thanks to a massive bar outfitted with TVs, high tables in the rest of the dark space, a sprawling and unceremoniously furnished patio, and the casual, seat-yourself attitude of the staffers, who are friendly and prompt but behave more like sports-bar employees than restaurant servers. The drink offerings emphasize Highland's tavern identity, too, with taps that feature an interesting and well-rounded run of mostly Colorado beers (though one line is always reserved for an out-of-state guest selection). But the partners behind Highland Tap recognize the importance of food at their place, too, and applied a fine-dining sensibility to a pub-like menu. The result is a board that focuses on burgers and other typical bar-food items -- but burgers and bar-food items that taste much better than those at your typical bar.

Even in this era of carbonated mojito spheres, caviar bubbles and beet cheesecake, the hamburger remains America's favorite food, and burger fans -- of which you are undoubtedly one -- are insanely opinionated about what the consummate burger should look and taste like. Highland Tap & Burger gets to the meat of the matter, serving its plump, char-grilled patties every which way: from classically naked to blanketed with cheese to whimsically fancified with feather-light shavings of... Highland Tap & Burger isn't just a sports bar -- but you wouldn't know that on game day, when this LoHi spot is packed with hat boys and bros cheering and jeering whatever's playing on the many TVs, drinking beers, taking occasional smoke breaks on the patio, and stuffing their faces with the great food that comes out of the kitchen. When they opened the place three years ago, the owners applied a fine-dining sensibility to a pub-like menu, and they've held to those standards. The... More »
Denver's seen a boom in burger joints over the past few years, with some stripping the burger down to basics and others loading it up so that it's no longer recognizable. Highland Tap & Burger falls squarely in the middle, rethinking this iconic American dish while also celebrating what makes it remarkable. The chimi burger tops a fat medium-rare patty with white cheddar and garlicky chimichurri. The Shroomluva's comes on a bun smeared with truffle aioli, along with a pile of... More »
The happy hour is delectable, the atmosphere was great, easy to get a drink....the owners are amazingly nice and very accommodating! The fire 'troth' (if you will) out front is icing on the cake =)
This is a great bar in Lo-Hi. Not loud, lots of tables, a good long bar, tons of big flat screens. Owner is fantastic, hands-on, young. Burgers and fries are seriously good. Brunch and desserts coming soon. Recommended.
