Hidden away on a Cobble Hill side street, Hibino features the cuisine of Kyoto, southeast of Tokyo, for centuries the capital of Japan. The heart of the menu is four dishes that change daily called obanzai, which reflect the home style cooking of Kyoto. (You can look online at Hibino's website to find the obanzai of the day.) Sometimes they incorporate the restaurant"s homemade tofu (don't miss it!), sometimes seasonal vegetables simply sauced with soy or bonito broth, and sometimes meat-centered stews with unusual ingredients. There's also excellent sushi, and several familiar standards of Japanese cuisine, slightly reinterpreted. The spare interior is pleasant, and the vibe reflects the laid-back neighborhood. Brush up on your sake knowledge before going, and get there early (or late) to snag a table.
