Jeff Sinelli, founder of Genghis Grill, is either ingenious or lazy by giving customers the choice to customize their own bowls of stir-fry. Whatever the case, he is clearly doing something right. The Mongolian-inspired fast-casual chain shows no sign of slowing its franchising expansion. People love playing with their food. Customers can either choose from one of the suggested Genghis Bowls, combos that comprise the menu, or they can get creative in the five-step ordering process. Choose a protein; season a protein; select veggies; choose a sauce; and then order a starch. Then cooks behind the counter go all hibachi on the stuff. An example of an available combo is the Firecracker Bowl. In it are scallops, calamari and shrimp seasoned with Dragon Salt that is mixed with its classic stir-fry mix, water chestnuts and green onions over steamed rice, the whole thing doused in Dragon sauce.
