This wonderful addition to the West Village relies on the talents of restaurateur Gabe Stulman (who hails from Wisconsin, and won"t let you forget it) and chef Mehdi Brunet-Benkritly, who comes to us courtesy of Montreal"s Au Pied de Cochon, one of the most porkerific places in the universe. He comes bearing pork head fritters, steamed beef tongue, and a beef tartare perfected with crunchy micro-nuggets of rice. A few dishes fall flat, but so what?
