Description

The leaf-based sauces of Guinea are indeed thrilling, like what Popeye shot into his mouth, only better. Whether made with sweet-potato leaves, spinach, or manioc foliage at Fatima, these stockfish-accented sauces provide verdant and pungent moisture for the huge plate of Uncle Ben's that's the focus of an African meal. Or go bright orange with chicken in palm oil sauce.

Guinea is one of the world's great rice-loving nations, and most meals at Fatima begin with a huge serving of it. The grain isn't tossed onto the plate pell-mell, but carefully sculpted into a mound that extends all the way to the edge. This isn't... More »
