The Atomic Cowboy, an imaginative, dark bar replete with a hip crowd enjoying drinks over rousing games of billiards, Trivial Pursuit and Connect Four, existed for a handful of years before the owners decided to assign part of the space -- and kitchen -- to another concept, housed under the same roof. And so Fat Sully's pizza, which turns out New York-style thin crust pies and slices for carry-out and eat-in, was born. The pizza kitchen stays open until at least 1 a.m., so even drunk late-night crowds have something to munch on without having to abandon their beers to wander down Colfax in search of sustenance.
