The building housing Euclid Hall dates back to 1883, when it was the home of a pioneering doctor. After that, it was used by the Masons, the Colorado Women's Relief Corps, the Cootie Club and Maudie's Flea Market; according to legend, it was also once the headquarters of a brothel catering to government officials and members of the media. No, that wasn't Soapy Smith's Double Eagle Bar, which served suds to a generation of Auraria students. But now, as the third restaurant operated by chef Jen Jasinski and Beth Gruitch, who already have Bistro Vendome and Rioja around the corner in Larimer Square, this venerable building has found its best use yet. The renovated space is stunning, open and modern, a perfect setting for Jasinski's interesting, upscale tavern cuisine -- everything from sausages to grilled-cheese sandwiches and poutines. The bakery for all three restaurants is located here, and turns out some top-notch desserts; there's an innovative roster of wines, cocktails and beer to wash everything down. And the owners clearly know how to reward hardworking restaurant employees: Not only does Euclid Hall stay open when other places shut down, but industry people always get the happy-hour drink deal.

Denver's craft beer scene is officially on fire. Which means that wine lovers are liable to end up at more than a few dining destinations whose emphasis on malt-and-hops-based beverages does not portend a pleasurable evening of wine enjoyment. Thank Bacchus for Euclid Hall, that elusive venue that doesn't overlook guests who prefer vino just because beer is the star of its beverage program. In fact, if you didn't know better, Euclid's crazy-good wine list might make you wonder whether beer... More »
Euclid Hall was one of the first upscale restaurants in Denver to tailor its menu -- full of rich, hand-cranked sausage, poutine and cheeses -- to beer rather than wine, and Denver hasn't stopped loving the combination. Over the past few months, however, Euclid Hall has upped its game, hosting a variety of events and evenings featuring beers on tap that are just as brilliant as the menu items -- and matching together in a way that makes you realize that in Denver, beer really... If you're going to go out, you may as well go out with a hedonistic, gluttonous, cardiac-arrest-inducing bang, and the best place to find that in this city is Euclid Hall, a restaurant just off Larimer Square that's devoted to suds and swine. Here you can stuff yourself on some of the richest foods the world has to offer: fat-laced sausages, platters of gravy-laden poutine, crispy pig's ear pad Thai, fried cheese curds, brûléed bone marrow and maple-syrup-drizzled fried quail... Euclid Hall has given Denver foodniks more than they could possibly ask for: poutines, fried cheddar curds, bone marrow, the Tim T-boning Manhattan shot, housemade blood-blotted boudin noir and a fulfilling armory of other fantastic sausages, foie gras and...pig's ears. No matter how often we go, the pig's ears, expressively Thai in preparation, are our dream date: Salty, sweet, penetratingly spicy and tart with citrus, the curls of flesh and cartilage, slicked with a tamarind sauce sharp... Jorel Pierce worked the line at Rioja for nearly four years under chef Jennifer Jasinski (who owns Rioja, Euclid Hall and Bistro Vendôme with business partner Beth Gruitch) before taking his maverick prowess to Euclid Hall, where he now mans the kitchen. Pierce is confident, brilliantly innovative and, at 26, one of the city's youngest kitchen kingpins to pioneer a line that turns out what may very well be the most ambitiously executed menu in Denver. His board, a witty, pithy digest... More »
Veteran Denver restaurateurs Beth Gruitch and Jennifer Jasiniski started with a clear vision for Euclid Hall: an American tavern, an unassuming place where diners could gather for beers and bar food, elevated well above bar level by making everything possible -- sausages, mustards, pickles -- in-house. With that articulate frame, they outdid themselves in every way imaginable. The space itself is beautiful, with history preserved in the brick walls and shiny wood floors, but washed... More »
Gone are the days when looking for a late-night meal meant finding the most palatable diner or drive-thru. Because Euclid Hall was envisioned as a beer hall and tavern, the place stays open as late as most bars, serving its entire menu until midnight Sunday through Thursday and until 1 a.m. on Friday and Saturday. Which means that after most chefs in this town have hung up their toques and closed their kitchens, diners with hunger pangs -- or drinking munchies -- can still head... More »
