Determined to put this ancient Dominican lunch counter to the test, we ignored the usual steam-table stuff and ordered shrimp asopao. Fifteen minutes later appeared an extravagantly good rendition: a red-tinged broth savory with vinegar, garlic, and cilantro, bobbing with shrimp and loaded with rice and cubed potatoes.
