Restaurants specializing in Dongbei cuisine ? the food of northeastern China, or Manchuria as the region was known before the Communist era ? began proliferating in the 'burbs before they made it into San Francisco proper, specializing in pickled cabbage, offal, and potatoes. Dong Bei Mama expands far beyond that scope, with a bewildering array of cold plates and charcuterie (the five-spiced pig's head is on par with any salumi in town), giant pan-fried pork and cabbage dumplings, stews of pork belly or lamb with cabbage and corn cakes, and crispy pork intestines coated in cumin, garlic, and chiles. The restaurant used to specialize in Sichuan cuisine, and the owners have kept a page of fiery dishes on the menu, too.
