Dohyo (pronounced "Doe-yo") is the sumo-themed restaurant in the wacky, futuristic Yotel hotel. Chef Richard Sandoval has created a vast range of small dishes--rather expensive for the price--that tweak Japanese standards with Latin and Southeast Asian flavors, often to good effect. A case in point is the soy-lacquered black cod, which comes with a pair of pickled artichokes. Other things we liked included a pile of Thai-flavored roast cauliflower, a pair of halibut sliders moistened with remoulade, and a sticky toffee pudding for dessert. Dishes we didn't like included a pallid miso soup absurdly modified with pozole (a/k/a Mexican hominy). Luckily, the wrestling theme is barely apparent, and you may want to wander out onto the terrace at some point to admire the city view.
