Mark Soyka and Frankie Crupi (owners of Soyka and Andiamo) recently purchased this Upper Eastside roadside dog stand. Their plan is to create more of a "destination," with menu upgrades and the addition of Brooklyn Brewery beers. The new lineup greatly expands on the previous focus of hot dogs in every imaginable incarnation, although the veggie dog has been eliminated. Burgers and salads are still on the board, and in truth, things have not changed drastically (except that the kitchen is noticeably cleaner). Expect other American regional comfort foods -- from cheesesteaks to oyster po'boys -- in the near future. Childhood nostalgia and your sweet tooth get fed with Cracker Jack, Yoo-Hoo, and old-fashioned sodas. Dogma still believes that eating a good hot dog is one of life's simple, unpretentious pleasures; however, it no longer banks on the idea that everyone has a "frank philosophy." The new menu will appeal to a wider crowd, except vegetarians, of course.

BEST HOT DOG STAND Dogma Grill 7030 Biscayne Boulevard Miami 305-759-3433 Hot dogs are eaten in 95 percent of American homes, consumption per person averaging out to 80 franks per year. Some like the boiled, porky type, and nobody makes the soft, pink pup better than Arbetter's Hot Dogs. Those who prefer Hebrew National 100 percent beef frankfurters, not boiled but assiduously browned on a flat-top griddle, and who desire a range of dressings beyond sauerkraut, pickled relish, and... Dogma, a chic little eatery on a rapidly developing stretch of Biscayne Boulevard, is anything but pedantic and boring. The hot dogs are served up in an array of fanciful arrangements, from the health-conscious Athens (which overflows with cucumbers, tomatoes, onions, olives, and feta cheese) to the decadent Pomodoro (caked in bruschetta and feta cheese). The waitresses are friendly, the trance music piping out of the kitchen is tastefully low-key, and an array of small tables are located... More »
David Tunnell, who used to be management at MTV's Latin American operation, decided to leave corporate life in the early fall of 2002. By Thanksgiving he'd opened Dogma (the name inspiration came from pal Carlos Carreņo), and by Christmas the outdoor shop was packed. Instant Biscayne hipster hangout. That's because Tunnell, who's from Los Angeles, went to some trouble to use only the best ingredients -- Vienna rolls, Hebrew National dogs, and real L.A. chili (which costs twice as much to fly in...
