why is our bbq the leanest and tastiest? we first cut the fat before we start cooking. all of our meats are then seasoned with a special blend of spices and slowly barbecued in an authentic wood burning brick oven. then it's time to trim the fat once more to ensure that you get the leanest meat possible. this is especially true for our brisket. (average brisket weight before cooking: 10lb. average brisket weight after cooking: 3lbs.) finally, we marinade the meat in our famous secret sauce
