Novo's staff is serious about coffee, and it has searched the globe for the best beans. Once it finds those beans and brings them stateside, the coffee company perfects the roast before sending them off to the outlets that brew them. So it's no surprise that Novo's own shop is as geeky about the process of coffee-making as it is about everything else. In the airy space that Novo shares with Mad Greens across from the Denver Art Museum, baristas pull perfect shots of espresso -- served in porcelain -- and brew each cup by the customer's preferred method, whether chemex, pourover or French press.

Try the winter warmer! The chicken and dumpling soup and clam chowder are amazing!
The best coffee in CO, hands down!
All the soups are great, but the Colorado Chub & Cheddar, with Oskar Blues' Old Chub stout is spectacular. Rich, flavorful, delicious.
