Brother-sister duo Paul and Aileen Reilly opened Beast + Bottle in March 2013, and although theyâd already run Encore together, this spot in the Uptown neighborhood is the restaurant âconjured in our heads since we were kids,â Paul explains. Itâs a seasonally inspired farm-to-fork operation, a nose-to-tail restaurant â and while you might think Beast + Bottle has come a little late to that party, rather than seeming passÃ©, the restaurant feels expansive, quirky and worldly, as the menu travels from Colorado to Maine to Italy to North Africa in the span of twenty dishes. Given the crowds that come here, on many nights, Beast + Bottle is the party. While Aileen handles the front of the house (a lovely patio and narrow but cozy dining room), Paul works wonders in the kitchen. But to understand exactly how wonderful his dishes are, you may have to ask the server a lot of questions. âPart of our mission is to educate the diner,â Paul explains, âso people ask questions and servers have a chance to say, âThis is something you havenât heard of; this is why weâre using it and why itâs incredible.ââ

Love this place to pieces. Great food, atmosphere and waitstaff. Very fond of brunch, served Friday-Sunday. Lamb French Dip - don't miss it.
Fantastic meal. One of the best I've had in Denver. Tasty mules, great wines and the mussels were some of the best I've ever had. I ordered the quail and it was outstanding. Excellent service.
