Chef Stephan Pyles conjures the flavors and culinary trends of Spain, the Eastern Mediterranean and the sub continent in small, tasting size plates that are at once technically precise, smartly executed and wondrously exquisite. Under the direction of chef Vijay Sadhu, the Indian portion of Samar's menu is even more memorableÂ if that's possible.
