Located in the heart of downtown Miami, CVI.CHE 105 recently expanded. Its modern and crisp interior is reminiscent of a hip South Beach eatery but with a more local feel. True to its name, the place serves more than 15 styles of ceviche and tiradito - fresh and imaginative versions boasting spice levels that go from zero to 60 in a heartbeat. The "seafood orgy" ($13.95) is a good choice for a bit of everything. This light yet slightly creamy dish, overflowing with fresh seafood, offers big variety and flavor. The "red and white" ceviche includes fish with three sauces and heat levels, laid out carefully like the Peruvian flag. The extensive seafood selection includes dishes such as tacu-tacu ($12.95) - a bean cake and brown rice - swimming with seafood in a delicate sauce, and poached fish ($11.95) that's slow-cooked with tomatoes and onions. But no Peruvian menu would be complete without traditional dishes such as arroz con pollo ($7.95) and lomo saltado ($10.95). The choices are many, the staff is knowledgeable and friendly, and the cocktails are worth a visit too.

I was a fan of Ceviche 105 until recently. My family and I have been there a few times. The food is good, not the best I've had, but it's close to our home and the food is decent. The atmosphere is too loud for my taste and the tables are too close together, almost touching. The staff is friendly ( I guess because they want your business, why would they not?). I got to see the real side of them when I applied for a position there. I'm a chef myself, and I LOVE Peruvian food. My husband is Peruvian and I was trained to cook Peruvian dishes. I have been cooking Peruvian dishes for over 5 years now so this position interested me very much. I called about applying for a position and they told me to go in person. I went the following day as instructed by the lady who answered the phone. I filled the application she gave me. After I handed it back to her she asked me: Are you Peruvian? I said: NO. She proceeded to tell me that they only hire Peruvians in the kitchen. I would understand why ( maybe the Head Chef wants someone who knows their food) but that's against the law and racist. My family and I love going out to different restaurants. We love trying new things. Many have told me I cook some Peruvian plates better than ones they've ordered in Peruvian restaurants. So why judge people?? Could it occur to them that maybe, just maybe this girl applying knows how to cook Peruvian food? I was raised in Miami, FL since I was 1 year old and I do not know how to cook food from my country. One should never judge a book by its cover. And for this very racist reason, I will never give my business again to Ceviche 105.

the ceviche is fantastic and the dishes are plated (Food Network word) so beautifully! hip and modern decor. And very attentive staff.
Ceviche, once a fabled dish of raw fish macerated in juices from an exotic, foreign land known as Peru, is now almost as common in Miami as chicken fingers.
