Stella Cordova introduced her iconic green chile close to fifty years ago at the original Chubby's. Today, a number of her offspring -- she had ten children -- have built businesses based on the legacy of that green chile. Alex Cordova, one of Stella's grandsons, is one of them. Today he doles out a variation of her jalapeno gravy -- thick, spicy and orange-hued -- at Cordova's Original Recipes, a modest eatery tucked into a cordoned-off corner of Fuego Fuego, a cavernous nightclub in an Aurora strip mall. In addition to the green chile, this Cordova offers other menu items similar to those at Chubby's: a number of burritos, chile-injected grilled cheese sandwiches, smothered fries and, of course, the Mexican hamburger. And he serves everything in a familiar, square Styrofoam box for takeout or eating in.
