Description
Colors has one of the most heartwarming stories in the New York restaurant scene. It was opened by former employees of Windows on the World, which was located in the World Trade Center. After 9/11 they all got together and decided on a radical idea: run the restaurant like a cooperative. That means every employee, from the chefs to the busboys, have a stake in the business. The kitchen has similarly lofty goals, using organic, local ingredients from small and mid-sized farms and small-batch booze from local distilleries and breweries. Choose from a multicultural array of dishes ranging from Korean bulgogi and tandoori lamb chops to New England clam chowder and Chilean ceviche. Inventive cocktails include a sidecar made with baked-apple-infused brandy and the Ginger Beerish, made with a nut brown ale from Brooklyn-based Kelso and rum and fresh ginger. The restaurant pays homage to its roots by etching all of its windows and glass with images of maps, details that go well with its polished, mature aesthetic.—Keith Wagstaff
