Cocina de Colima is a lot more about the Mex than the Tex. Breakfasts feature migas, chilaquiles and fried plantains, and dinners feature traditional Mexican meats like lengua, barbacoa and chicharrones. Like the city it's named after, Colima is seafood-heavy. Still, you can get tacos, flautas, fajitas, nachos and lots of other more familiar dishes, if the more south-of-the-border options aren't your thing. A few other dishes seem unique in and of themselves; you can get a side order of three wedges of cheese, for instance. You can also get a side order of fajita beef or ceviche on a big round corn tortilla, which is a little unusual for these parts.
