From the restaurant's logo through its desserts, Citizens Band is clearly the work of a California-trained, technique-curious cook who loves making Any Highway USA road food. Chef-owner Chris Beerman's lo-fi space ably translates the Americana of Bruce Springsteen, Iron & Wine, and Ratt into interior design. And while his food can be uneven in its execution - please don't get the mac and cheese - it evidences wit and creativity. He grills a double-cut pork chop and perches its rib bone, sweetly braised, alongside. He braises a square of bacon and tops it with a slow-cooked, deep-fried whole egg that melts as soon as you slice into it. The roast tomatoes on his Kobe burger serve as both fixins and ketchup. And when it comes to desserts, courtesy of the attached Pinkie's Bakery, pastry chef Cheryl Burr shows she believes in the sanctity of the all-American pie.
