Description

Lon Symensma did time in Michelin two-star restaurants in France, traveled extensively throughout Southeast Asia and China, was part of the opening crew of Jean-Georges in Shanghai, and went on to open and operate Buddakan in New York City. But now he's taken a bite out of Denver with ChoLon, a 120-seat Southeast Asian restaurant. Working from an astonishingly furnished open kitchen that gleams with the latest (and greatest) equipment, the crew at this sleek spot turns out a monsoon of small bites -- all of which are meant to be eaten without utensils or chopsticks -- as well as large plates and wok dishes. The window-wrapped dining room, artfully strewn with bamboo and decorated with reclaimed walnut accents, conversation-piece chandeliers, solar panels, stylish banquettes and a community table, is complemented by a cosmopolitan bar that's sensibly hooked up to Wi-Fi.
