Temporarily closed: Pueblan food is rare in Denver, which is strange, since this city boasts a fair number of Mexican immigrants who've come up from the nearly legendary hotbed of line cooks and chefs in Southern Mexico. Fortunately, now we have Chili Verde, which offers this engaging and multicultural cuisine in all its weirdly Latino-French splendor, and in an environment that's much more upscale bistro than a neighborhood taqueria. Brothers Eder and Hanzel Yanez-Mota opened their restaurant with the idea of easing people into the notion of Mexican food without refritos, without globs of bright-yellow cheese product and massive burritos, and they've been winning converts to the concept that the best Mexican food can include a beautiful French crepe filled with Poblano rajas and topped with a silky cream sauce.
