Star dishes include the Fiordilatte con Prosciutto di Montagna, a mountain-air-cured Prosciutto with Fiordilatte cheese and piquant roasted peppers , and the Roman favorite Bucatini Amatriciana made with Bucatini pasta, Pomodoro sauce and Guanciale and dusted with a fine coating of Pecorino Romano cheese.
