Old Florida fish houses come to mind -- though there's nothing old about the fish at Capt. Charlie's Reef Grill in Juno Beach, its preparations, or the wine list. A paper sheet outlines specials, and it changes with what's available during the night; dishes are crossed off or casually mentioned by the servers once they're gone. (Inside tip: Spicy grouper cheeks are always the first to go.) Sit down to individual bowls of fresh coleslaw set out on the table, and decide from the menu or go with just appetizers-- small-plate sharing is common and encouraged. Pair a fish or pasta cooked in any number of ways, often with a Caribbean flair, with a wine from one of the most reasonable lists in the county. Fish is flapping-fresh -- the reason the spot attracts everyone from golf greats to baseball legends and country singers. Come casual, and wear comfortable shoes -- if you don't get a coveted seat in the open dining room or at the bar, you can wait with a glass of wine in the parking lot, as many do in season.
