Description

If George Jetson opened a Vietnamese noodle shop, this is what it would look like. A bar runs down one wall, lined with modular red barstools; steam rises from the open kitchen, where chefs boil piles of rice noodles. In a city with plenty of good, down-home Vietnamese pho and bun (rice noodle) joints, what's the point of a tarted-up version? Summer rolls stuffed with shrimp and Berkshire pork belly, marinated hanger steak noodle bowls with apples and mint, and wild boar blood sausage with pickled green papaya;that's why. On the other hand, when you ask for sriracha hot sauce, you don't want a dollop the size of a pea, served on a tiny white plate. Some things were never meant to be dainty.
