Wayne Hammond still remembers his father's prying eye and high standards for Jamaican patties. “It was the most annoying part,” he said, recalling when at age 10 he began stuffing and folding flaky crusts with curried chicken, spicy ground beef and callaloo. The family owned a restaurant called Hammond's Finger Lickin' Good in Mandeville, in central Jamaica, before moving to the tourist center Ocho Rios and later, in 1979, Miami Gardens. That old bakery remains, nearly in the shadow of Sun Life Stadium. The Lauderhill bakery opened in 1990 and today sells from 1,800 to 2,000 patties a day. Just be warned: The red dot means hot.
