Bono's has more than two dozen locations, most of them centered around Jacksonville, Florida, where the original barbecue shack was erected in 1949 by founder Lou Bono. Although the entire operation was bought in 1980 by the Adeeb family (a multi-generational hotel and restaurant family also based in Jacksonville), the same pit master, Harvey Green, has been working the Jacksonville smokers for fifty years. But that doesn't mean that the recipes hold up thousands of miles away. Bono's is a franchise operation, and as our critic discovered, 'cue that works in Florida just doesn't rise to the occasion in the Mile High City.
