Just the concept of local ingredients trucked in from the farm every day, the reliance on organic meats and vegetables, and the ever-changing menu would be enough to attract enough of a following to sustain this small Oak Cliff station. But the kitchen is pretty damn good too-even without a deep fryer or walk-in freezer as back-up. The flavors are intensely fresh and the dishes creative without being overwrought. And if that's not enough, the owners designed Bolsa with great sensitivity to the building's historic look and feel. OK, so it's an old auto shop-it still feels like part of a 1940s neighborhood. Open, airy, with a cool "beer garden"-style patio. Really, one of the best new restaurants.

Choosing a best burger is like choosing the best sex position. There are just too many options, and you can only enjoy so many a day. If you really want a burger that tops them all, you need a version that covers all the bases. Thankfully, Bolsa's bliss on a bun does just that. Summers in Texas can be brutal, so patio-sittin' isn't exactly a popular pastime in the hot months. That is, unless you're a regular at Bolsa near Oak Cliff's Bishop Arts District. The Oak Cliff restaurant caught everyone's attention by offering a menu that changed daily based upon whatever a slate of farmers brought in. Don't tell food critic Dave, but we stole the bag of Bolsa Blend that landed on his desk a few weeks back. Because, see, we finished ours in a week--should have gone much longer, damn our addictions! Sure, the great food and wine selection keeps the clientele at Bolsa satisfied despite the long waits and occasionally lazy service. It's the décor that really sells it, however--anyone who knew it in its former incarnation as Settles Auto Garage would be amazed with the clean, airy feel of Bolsa's interior now.
