Description

This place is so confident of its sushi, there's no sign outside, though you can see four chefs working furiously through the window of the narrow, wood-intensive space. The accent is on novelty: How about a piece of arctic char? Or raw pigeon breast, with a flavor so rich it's almost repulsive? Our favorite variety comes from the list of hakosushi: rice formed in a box with mellow smoked yellowtail and shiitakes pressed on top. The long list of starters includes a soup tasting of shiso leaf and orange zest, with ribbons of squid standing in for noodles.
