Olav and Melissa Peterson, the husband-and-wife team behind Bittersweet, worked hard to give the old gas station that houses their restaurant new life. Olav built a menu that uses classic French technique to showcase high-quality ingredients. His tight board changes with the seasons, makes use of many parts of the animals he buys, and draws from the patio gardens that surround the building whenever he can. He's a perfectionist, too, constantly tweaking dishes and making changes to his list, constantly trying to make everything better until he gets it right -- then he scraps it completely and moves on to the next season. Melissa was in charge of the remodel, and she took her design cues from Olav's food, channeling an artisanal blend of old world and modern aspects. The two intimate, high-ceiling dining rooms seat a total of sixty people at tabletops meant to resemble European butcher blocks. Plush, hide-covered chairs sit in the foyer, old maps and Melissa's artwork adorn the walls, and both sides of the restaurant feature an indoor-outdoor fireplace. But the best seating of all may be on those patios.
The crew at Crimson & Gold, a bar near the University of Denver, apparently didn't venture outside yesterday, because while Denver's finest meteorologists had it all wrong when they predicted that th... More »
The ramen dishes at Uncle, which I review this week, are so good that it's worth braving the wait to get a seat at Tommy Lee's restaurant in Highland. But Lee's first foray into noodles wasn't Japanes... More »

Olav Peterson, the brilliantly talented chef/grower/gardener/owner of Bittersweet, draws a crowd at his lovely West Washington Park restaurant, an urban oasis hedged with a stunning 600-square-foot organic garden (it doubles as a patio), from which Peterson plucks seasonal foodstuffs. Sure, locavorism started long ago, and sourcing locally is nothing new, but Peterson is his own pioneer, steadfastly dedicated to growing as many of his own ingredients as he possibly can -- and the... How does your garden grow? Just ask Olav Peterson, the exec chef/owner of Bittersweet, who skillfully designed his fetching urban patio to ensure that his menu stays seasonal and fresh through much of the year. Strewn with shrubbery and shady trees that shimmer in the sun- and moonlight, as well as edible flowers, dozens of herbs and an abundance of vegetables, including squash and zucchini, numerous varieties of heirloom tomato plants, Swiss chard and collard greens, this is a gorgeous... Bittersweet is the blood, sweat and tears of chef/owner Olav Peterson, who opened his own restaurant after spending the past several years as the exec chef of Bistro One. His seasonal board is short but powerful, a direct, focused and ambitious stab at some of our favorite foods, including clam chowder. There are dozens of renditions around town, most of them a flat vat of cream and canned clams -- but Peterson's is a stunning bowl of transcendence. He uses cream, to be sure, but the... More »
