Benares is an ambitious Indian restaurant with food grounded in the northeastern state of Uttar Pradesh and the city Varanasi sacred to Hindus, and site of the burning ghats along the Ganges River. One of the specialties of the area is Benarasi dum aloo, small potatoes hollowed out and stuffed with cauliflower, but there’s also a ground-lamb kebab attributed to the city of Kakori that arrives surprisingly dotted with poppy seeds and spicy as hell. Radiating from Uttar Pradesh, regionally recipes from other parts of India are showcased, most notably from the states of Tamil Nadu and Kerala in the extreme south of the country. Dishes from these areas are highly recommended, but avoid anything made with chicken (boneless, skinless breast is used).
