As Barolo Grill prepared to enter its third decade, owner Blair Taylor made some changes at his Piedmontese restaurant, a longtime monument to fine dining. When the staff took its annual trip to Italy in the summer of 2011, Taylor gave the interior an update, keeping the red-and-gold color scheme, the light linens and the softly glowing lights, but getting rid of the '90s-era wall hangings and artwork in favor of a cleaner, more classic feel. Under the direction of a new chef, the menu has been updated, too. Barolo still offers two ways to dine: a la carte or from a fixed price, five-course tasting menu. But the new offerings are more playful, with unexpected combinations -- such as risotto and escargot -- and unusual garnishes, including persimmon and pumpkin flakes. It also appears that more of a French influence has crept into the kitchen -- but when asked about that, the gracious, well-rehearsed servers don't miss a beat, simply pointing out the proximity of France to Piedmont. Taylor's work paid off: After two decades in business, Barolo has not only reaffirmed its relevance to the Denver dining scene, but is evolving into an even better restaurant.

Sure, plenty of those chain operations now offer signing bonuses, health insurance and other benefits of membership in the organization. But do they serve mamu? At Barolo Grill, Blair Taylor's elegant, intimate eatery, the staffers all share in a free, post-business meal known as mamu, named in honor of "someone's grandmother's favorite meal," according to Taylor. The mamu offerings vary depending on what's left over that night, but whatever's on the employee menu, it's always washed down... More »
Blair Taylor spends so much time in Italy, we're surprised he hasn't been made an honorary Italian -- or at least had his estimable Barolo Grill given embassy status. Every summer Taylor takes Barolo staffers to Italy so they can taste the food and wine, and he can check out trends that might be worth incorporating into his restaurant. While he's there, Taylor also spends time honing his wine list, a carefully chosen roster of some of the best vintages Italy has to offer, many of them on the... More »
Classy, not stuffy. Try the controversial duck...love it or hate it
This place is awesome. Outstanding Wine & Wine selection, reservations are mandatory as this place is a local favorite and always jammed packed. The weight staff make you feel great as they really take their time explaining the dishes and stimulating your imagination! Bravo! Also, they remember your face if your a regular which is even better. Home made pastas daily, very gouret-ish, white table cloth, crystal wine glass'. Be prepared to bring $$$ for 2 people as the prices are high though very worth it if you are a "foodie" Minimum attire is a nice pair of jeans, shirt & blazer. Bueno Mange!
